Quick, cheap, and easy for when you want potato salad, but not all of the work

I use the microwavable Bob Evans mashed potatoes, but you can use regular instant potatoes, too. Just make sure to have about 1 pound.

Boil the eggs until they are hard boiled (about 10 minutes).

Peel the eggs, then cut them in large chunks. Add mashed potatoes and relish, and if you want, add some chopped onions and a teaspoon of mustard. Personally, I prefer not to use onions and mustard.

Mix and serve! It's really that easy.
